Indian Ocean Fresh are producers of award-winning sashimi grade Yellowtail Kingfish, raised just off the Geraldton coast. The fish are making waves in Australia and internationally, having recently been awarded the Australian Food Awards gold medal and best in class.
My brief was to capture the whole fish and its beautiful flesh as well as create, style and shoot several summery recipes using the fish in its pristine raw state. Tahitian Poisson Cru; Kingfish Crudo with Orange Vinaigrette, Chilli & Fennel; and a diced (rather than minced) Tartare were the result.
